Decaf is abominable.
Absolutely!
And for good reason...
=> Poor quality coffee beans.
=> Industrial processes, with solvents that remove caffeine but also the essence of the flavors.
=> Roasting that is far from mastered, taken to the extreme of being too dark, bringing out horrible burnt and bitter notes 🤮
The result?
A bland, flat coffee, consumed "by default," a blatant lack of character...
AND ABOVE ALL NO EMOTION!
Why Decaffeinated?
Because we love coffee.
But not always the effects of caffeine.
=> Affected sleep
(yes, even if you think you can drink coffee and sleep well, your deep sleep is significantly reduced)
=> Anxiety
=> And even a certain addiction
But for us, it's impossible to give up that taste, that ritual, those special moments...
So, we've been looking for the best decafs for over a year now.
And for that, we tested dozens of "specialty" roasters
In France, throughout Europe, in Japan, Taiwan, South America, in short, pretty much everywhere in the world during our last travels.
We were (almost) always disappointed...
You know us, we couldn't just let that failure stand.
So we decided to contact the farms directly.
Of course, we got a lot of rejections!
But after dozens of messages and a few months of searching... We finally stumbled upon a gem 3 months ago in Colombia
An exceptional coffee in an ultra-exclusive nano-lot.
An innovative process.
And above all, a precise taste.
And guess what?
We spent the last 2 months testing the first prototypes, to find the perfect roasting curve for these two gems.
During the first tests, Léopold, our roaster from Lyon, even confessed to us: "Honestly, you really impressed me."
Unfortunately...
We have an extremely low volume of coffee.
Probably far too low 😣
Once it's gone, this experimental batch will never return.
